Ginger Nuts

Ingredients

  • 2 cups plain flour
  • 1 cup castor sugar
  • 1/2 tsp bicarbonate of soda
  • 1 tsp cinnamon
  • pinch salt
  • 1 heaped tbsp ground ginger
  • 125g butter
  • 1 large egg
  • 2 tsp golden syrup

Method

  1. Preheat oven to 180°C.
  2. Mix flour, sugar, bicarb, spices, and salt in a large bowl.
  3. Rub in butter until mixture has a very fine, crumb consistency.
  4. Beat in egg and golden syrup.
  5. Work into a firm dough.
  6. Roll teaspoonfuls of mixture into small balls, place on trays 5cm apart.
  7. Bake in the oven for 15 minutes.
